Fat bombs (Nut-Free)
We all love fat bombs as a great snack for to replace highly processed, super sugary snacks. But sometimes, you need to take an extra step and eliminate nut consumption as well (see our fat-bomb recipe containing nut butter here). That’s where this recipe comes in! These are still great for those looking to increase (healthy) fat intake, lower sugar intake, and support a ketogenic diet. They are extremely rich, and mildly sweet, and this recipe variation is NUT-FREE while still tasting good with a good texture, making them satisfying after one (or two ;), so you don’t over-indulge.
Ingredients:
2 cups coconut oil (refined will have less of a coconutty taste)
1/2 cup cocoa powder
6 tablespoons raw honey (adjust amount to your taste)
2 teaspoons vanilla extract
A couple dashes of salt, or more to taste
If coconut oil is very hard, you may need to partially melt it before proceeding. Ideally you want coconut oil that is easily scoopable but still completely solid.
Add coconut oil, cocoa powder, honey, vanilla extract, and salt to food processor, process until all ingredients are evenly mixed.
Taste and add more honey or salt as necessary.
Fill silicone molds or ice trays with mixture.
Freeze until fat bombs are solid, then pop out and store in a sealed container in your freezer. Store in the freezer, as coconut oil can quickly become soft when warm.
