Chicken salad

This recipe is light, simple, and tasty — the easiest lunch you’ll ever make! It also makes for great leftovers, a win for any busy family.

 

Ingredients:

  • 3x12 oz cans of chicken, drained (or shred your own chicken)

  • 1 medium organic apple, chopped (we like honeycrisp or granny smith)

  • 1-2 organic celery stalks, chopped

  • 3 thin slices of red onion, chopped

  • Salt and pepper to taste

  • Mayo, enough to mix it all well - your call (we like Primal Kitchen)

  1. Mix everything together.

  2. Enjoy plain, on gluten-free toast, or with gluten-free cracks (we like the Glutino brand’s crackers)
