Berry and Mint Salad

If there is a more refreshing summer treat, we don’t know what it is. This berry and mint salad is hydrating, filled with antioxidants, and can (and will) be enjoyed by all ages!

 

Ingredients:

  • 1 pound fresh strawberries, hulled and halved

  • 8 ounces watermelon, chopped into bite-sized pieces

  • 8 ounces fresh blackberries

  • 8 ounces fresh blueberries

  • 8 ounces fresh raspberries

  • 1/4 cup chopped fresh mint leaves

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon honey

Instructions:

  1. Add all berries and mint to a large bowl.

  2. In a separate bowl, whisk together the lemon juice and honey until combined.

  3. Pour the liquid over the fruit and mix well.

  4. Serve immediately, or refrigerate for up to 3 days in a sealed container.
